
Makes approx 6 x 300g jars.
Ingredients
600g cucumbers, unpeeled
1 brown onion, thinly sliced
1 and ½ tbsp salt
63ml ish hot water
250ml white wine vinegar
120g sugar
2 tsp brown mustard seeds
1 tsp dill, chopped
¼ tsp ground turmeric
½ tsp chilli flakes
Instructions
- Slice cucumbers thinly then mix with sliced onion in a large stainless bowl.
- Dissolve salt in hot water, then pour over the cucumber mixture.
- Mix through and leave for 3 hours.
- To make pickling liquid, mix remaining ingredients in a saucepan big enough to hold all the mixture including the cucumber.
- Bring to the simmer over medium heat, stirring until sugar has dissolved.
- Pour the cucumber mix into a colander and press out any liquid gently.
- Tip the cucumber into the pickling liquid and simmer for 2-4 minutes, stirring once or twice.
- Decant the cucumbers and liquid into the jars.
- The liquid should cover all the cucumbers before you put the lid on- if there is not enough liquid you can quickly make some more with the same ratio of sugar/vinegar/spices.
- Place the lid on the jars whilst they are still hot.
The recipe is flexible so if you want to change the spices, add fresh chilli or garlic you can. Just make sure that the vinegar to sugar ration is the same!
Notes:
Sterilizing jars: Make sure you sterilize your jars and lids before you use them, you can see some ways of sterilizing jars on the Oddbox website alternatively you can also boil them for 10minutes.
Courgette pickle: You can follow the same recipe and process for pickling courgettes, just peel the courgette before you salt them
Hamburger pickles: You can also add a tsp of garlic powder to the pickling liquid if you want them to taste a little bit more like hamburger pickles.
